"You need to have some cinnamon in your life."

A few weeks ago, I had a brilliant idea. What if instead of making just regular chocolate chip cookies, I added cinnamon? I asked a friend what she thought and she liked the idea. 

I sat on the idea longer than I probably should have because at the time, my friends and I were going to Spain for a while. We were so excited and ready to go - buying all the extra activities we would do and just getting ready to go. Then Covid blew up over night. We watched what was happening and decided that depending on what happened, we would decided to go or not go a week before our trip. The next day, the U.S. restricted pretty much all travel to Europe. We were crushed and tried to plan another quick spontaneous trip but that one didn’t happen either.

Since our vacations had gotten cancelled, I have had a lot more free time on my hands. Hence the time to try out cinnamon chocolate chip cookies.

Before I made the cookies though, I needed to brave the store since we were running out of sugars. I ran to King’s and the baking isle was pretty empty. There was only sugar substitute and expensive organic regular sugar. Being a fairly experienced baker, I knew that I could use regular sugar instead of brown sugar. I grabbed a few bags of what I could find and headed home for some baking. 

Just an fyi, white sugar can be used in place of brown sugar. Will the cookie or cake or whatever you’re making come out exactly right? Not necessary; the flavor might be a little different than normal. Another thing, I some times leave butter out for baking for days. Some times I feel like this isn’t a good thing but I know softened butter is an important baking requirement.

Now for the recipe. Full disclosure, I didn’t come up with the recipe. This is the recipe I used: Triple Chocolate Chip Cookies. I used regular chocolate chip instead of the combo chips. I added 2 teaspoons of cinnamon to the recipe. You could definitely taste the cinnamon with that amount but I think that you could add more - another teaspoon or two wouldn’t be over doing it.

Flavor wise these cookies were delicious! They didn’t look too pretty though. I think because I only had white sugar instead of both types of sugar. The butter might have been an issue too since it was out for a couple days. The crispiness of the cookies (cause they ran) was fun but sometimes they were really crumby. My roommates and I all happy ate the cookies though.
